15 Minute Lo Mein

A quick, healthy, and delicious meal for any time of the day!

Ingredients

11/2 cups broccoli

3 cups shiitake mushrooms, sliced

1/2 cup onion, sliced

1 cup carrot, julienned

12 ounces peeled and deveined shrimp

1 garlic clove, crushed

1/2 teaspoon crushed red pepper flakes

1/4 cup soy sauce or to taste

salt and pepper to taste (if needed)

8 ounces Lo Mein noodles

4 Tablespoons olive oil

1 green onion, chopped for garnish (optional) 

Instructions

  1. Cook lo mein noodles according to package directions, drain, and set aside. (They will stick together when you leave them! Don’t worry about it. Splash them with some cold water before tossing them in at the end.)
  2. In a large wok (or skillet) over medium heat, add olive oil. Heat until shimmering.
  3. Add mushrooms, garlic, and red pepper flakes and sauté until tender, about 3 minutes.
  4. Stir in shrimp and continue to cook for 2 minutes. 
  5. Add onions, carrots, and broccoli. Sauté for 1 minute.
  6. Stir in lo mein noodles. Mix thoroughly.
  7. Add soy sauce.
  8. Taste for seasoning and enjoy!
