This Apple Almond and Cranberry Super Green Salad is definitely not your average salad. Three different types of greens tossed with olive oil and red wine vinegar, topped with tart granny smith apples, sweet dried cranberries, crunchy almonds, and goat cheese crumbles. This salad is so easy to throw together. Colorful, healthy, and actually pretty filling! Enjoy this as a light lunch, side salad, or even a lighter dinner if you aren’t feeling too hungry. It’s the perfect way to kick-off healthy eating for spring!

About The Recipe

I am what you definitely call a picky salad eater. I can think of more things that I don’t like about salads than I can what I like about them. It’s really difficult! I love greens but it’s almost impossible for me to order a salad somewhere and actually get something I like. I just want a few simple things, you know?

So, this salad is everything that I adore!

  • My favorite greens 🥬 (baby kale, spinach, baby swiss chard)
  • Granny smith apples because everything is better with a little sweet tartness 🍏
  • Almonds!!
  • Sweet, sweet dried cranberries
  • Red wine vinegar and olive oil (even works with avocado oil! 🥑)
  • Goat cheese 🤤

Sweet, tart, tangy, and absolutely delish is the only way to describe this delicious salad! I have it for lunch pretty much 4 times a week and I just had to share it with you guys.

I’ve actually be really excited to share this recipe with you guys ever since the first time I made it, but I must admit that this salad never lasts long enough for me to actually take photos of it. I finally managed it though! And i hope you guys love it as much as I do.

How To Make

It’s literally all about throwing it together. First, get the ingredients together. Make sure to wash your greens and your apple!

Next, core and chop the apple anyway you want. I like to quarter it and slice it into half inch chunks, but that’s just me! You can always do smaller chunks or bigger. Whatever you like.

Combine the red wine vinegar and oil, pour over greens and toss until the greens are well coated.

Add the apples, cranberries, and almonds and mix well!

Sprinkle crumbled goat cheese over the top and serve!

Seriously, the easiest salad to make and takes literally 5 minutes to make. It’s perfect when you’re hungry and want a quick, super healthy bite!

Expert Tips

  • If you don’t like one of the greens used in this recipe, that’s totally okay! You can change it out for something you do like.
  • Make sure your granny smith apple is fresh and not grainy.
  • If you want something a little different, try roasting the almonds! We have a recipe for Salted Butter Roasted Pecans that you could easily switch to almonds, or you could go the sweeter route and try Cinnamon Sugar Candied Pecans in this!
  • If goat cheese isn’t your fancy, try switching it for feta or even your favorite vegan cheese!

Sweet, tangy, sour, and absolutely the best! This apple almond and cranberry super green salad is one of my absolute favorite things to make for a quick and light lunch, or as a healthy side for dinner.

Ingredients
 

  • 4 cups greens, i use a mix of baby kale, baby swiss chard, and spinach
  • ½ Tablespoon red wine vinegar
  • ½ Tablespoon olive oil
  • ¼ cup almonds
  • ¼ cup cranberries
  • cup chopped granny smith apple
  • goat cheese, for topping

Instructions
 

  • In a medium sized bowl, combine greens and olive oil/red wine vinegar.
  • Add almonds, cranberries, and apple.
  • Top with goat cheese crumbles and serve!
