What screams summer better than BBQ chicken? And what better way to serve BBQ chicken than on a pizza?! This is truly the best of both worlds!
I think that what makes pizza so amazing is that you can literally do anything with it! There are no right or wrong answers – except maybe pineapple – but that’s another debate for another time.
It’s also a great way to get kids to eat foods they normally might not want to try. Mushrooms, zucchini, eggplant, tomatoes. If you put it on a pizza crust and top it with cheese, everything is good!
I came up with a sourdough crust that is a bit wetter than a traditional pizza dough. That allowed me to roll it out extra thin and have a crispy, crackly crust, but also one that is still soft enough to be foldable if you prefer to eat it that way.
The sourdough is added with the rest of the ingredients, no retarding, so you get a subtle flavor that really highlights the ingredients on this pizza!
What goes on a bbq chicken pizza
In addition to the barbecue sauce and the chicken, which are obvious, we also like to add bacon, red onion, and three different kinds of cheese!
When it comes to selecting bacon, we prefer applewood smoked. It adds just a bit of smokiness to round out the flavor. You can absolutely use whatever bacon you prefer, or whatever you have on hand. The red onions add a hint of sweetness and a little bit of color. Again, if you don’t have red onions, feel free to substitute yellow or white.
When it comes to the cheese, we always start with a base of parmesan – no matter what kind of pizza we are making. With this particular pizza, we have found that provolone brings a little something extra to the table. And then finished off with fresh mozzarella to give it the perfect amount of gooeyness when you bite into it.
But sometimes we have fresh cilantro and we can’t help but add a little bit on top after we bake it! It adds a fresh and bright element to an already amazing dish!
How to make bbq chicken pizza
The first thing you need to do is make the dough for your crust. (Or you can use a bought pizza dough, if you prefer. Most grocery stores sell fresh pizza dough!) While the pizza dough is rising, preheat the oven just as hot as you can get it. We use a pizza stone in ours. And if making fresh pizza is something you enjoy doing, investing the $30 or so in a stone is well worth it!
Once your oven is preheating, gather your ingredients together. Cook and crumble the bacon, slice the red onions, grate the parmesan, and slice the mozzarella.
When your dough is done proofing, flour a piece of parchment paper – and your hands!
Grab out as much pizza dough as you want (we use about 12 ounces of pizza dough for this) and place it on your parchment paper. Sprinkle the top with a little bit of flour and start rolling! We prefer thinner crust pizza’s but the beauty of pizza is you can do whatever you want!
Now it’s time for the toppings. We generally go sauce, parmesan, chicken, red onion, bacon, provolone, and then mozzarella. You don’t have to go in this specific order but this is what we feel like makes the best pizza!
After all the toppings are done, place the pizza into your preheated oven and bake! This will take anywhere from 5 to 10 minutes depending on how hot your oven is and how you like your pizza cooked. Some prefer it burnt a little, some prefer golden brown, etc. Just make sure to keep an eye on it and turn it around using a pizza peel when necessary!
Can you reheat bbq chicken pizza
Absolutely! That’s the beauty of homemade pizza. It’s just like ordering but it tastes 10x better.
You can reheat this pizza in the microwave or the oven. We prefer heating it up in the oven because it allows the crust become crisp again.

- Unless you like raw red onions, we recommend placing the red onion under all your other toppings. This allows the red onion to steam and be cooked through. If you place it on top, it just gets broiled and doesn’t really cook all the way through and tends to be a very over powering flavor.

- 12 ounces sourdough pizza crust, homemade or store-bought
- 1/2 cup barbecue sauce
- 1/2 cup grated parmesan cheese
- 1 chicken breast, shredded
- 4 pieces bacon, cooked and crumbled
- 1/3 cup chopped red onion
- 5 slices provolone cheese
- 6 slices of mozzarella, crumbled
- Roll pizza dough to about 1/8 inch thick.
- Top the dough evenly with BBQ sauce. Sprinkle parmesan evenly over the top of BBQ sauce. Add chicken, bacon, and red onion. Top with provolone cheese and mozzarella.
- Bake pizza for 5-10 minutes or until desired doneness.
- Remove from the oven. Slice and serve immediately.
