I know a Bellini is usually associated with brunch, but I believe a great Bellini may be the quintessential New Year’s Eve drink! Ours are made with fresh (or frozen, if you don’t access to fresh) fruit purees.
These are a perfect drink for your celebration. You can set up a small mixing bar for your party and let everyone come up with their own concoctions! Adults can mix them with sparkling wine; and if you have little ones at your party, feel free to set up a second mixing bar just for them. Club soda tastes just as good with the fruit purees, so kids can join in on the fun (or adults who have been named the designated driver)!
The purees can be made ahead of time and refrigerated. So, if you have any leftovers, the purees make incredible toppings for waffles or ice cream!Print
Fruity and delicious! These bellinis are a wonderful way to add an air of festiveness to any occasion.

2 pints fresh (or frozen) fruit
1/2 cup sugar
4 teaspoons lemon juice
Sparkling Wine (or Club Soda)
- Place all ingredients in saucepan.
- Cook over medium heat, stirring constantly, and breaking up fruit pieces, until sugar dissolves completely.
- Remove from heat and let cool.
- Transfer mixture to bowl of food processor.
- Process for a minute.
- Strain using a mesh strainer into clean bowl.
- Fill half of champagne flute with fruit puree.
- Add sparkling wine.
- Stir gently.
Adjust ratio of fruit to sparkling wine to taste.
