Bellini

Five champagne glasses with five different flavored bellinis

Fruity and delicious! These bellinis are a wonderful way to add an air of festiveness to any occasion.

Ingredients

Fruit Puree:

2 pints fresh (or frozen) fruit

1/2 cup sugar

4 teaspoons lemon juice

Sparkling Wine (or Club Soda)

Instructions

Fruit Puree:

  1. Place all ingredients in saucepan.
  2. Cook over medium heat, stirring constantly, and breaking up fruit pieces, until sugar dissolves completely.
  3. Remove from heat and let cool.
  4. Transfer mixture to bowl of food processor.
  5. Process for a minute.
  6. Strain using a mesh strainer into clean bowl.

Bellini:

  1. Fill half of champagne flute with fruit puree. 
  2. Add sparkling wine.
  3. Stir gently.

Notes

Adjust ratio of fruit to sparkling wine to taste.
