One Pot Bourbon Sweet Potato Casserole with Roasted Marshmallows…for those nights when you’re craving something just a little sweet to go with dinner, but also need something super simple and easy to prepare! Boiled sweet potatoes with bourbon, nutmeg, a splash of vanilla, and just the right amount of brown sugar to make this casserole sweet and so delicious! The secret to this one pot casserole? Using a bourbon that has a mild hint of vanilla. Oh, and when you make this casserole, if you boil the potatoes and then use the same pot to mix everything… that means only one pot and no extra mess! This is the perfect fall and winter dish to serve any night of the week, but especially for Thanksgiving and Christmas dinner. It’s so delicious and looks pretty on any kind of dinner table, no matter what you’re serving! Not to mention that pretty much everyone LOVES a good sweet potato casserole. Especially when it’s one covered in roasted marshmallows! This casserole will be your new go-to side for any occasion during the holiday’s!

It’s about this time every year, my mom and I really start getting into all those rich family that we just know will bring comfort to everyone. And, with this year being the year that it is, I think we all need a little dash of comfort. So, whether you’re looking for Thanksgiving dinner sides or Christmas… this casserole will be absolutely perfect because it is the definition of comfort.

Can it really get any better?

To be honest, we make this casserole every year for Thanksgiving. It’s a staple. If i’m gonna over eat on anything, it’s gonna be this. It’s the perfect combination of sweet and savory. It’s kinda like having dessert…during dinner!

So, if you’re looking for a healthy Thanksgiving (or Christmas!) side dish, this is not it. BUT if you are looking for a delicious, comforting dish that everyone in your family will enjoy, then this is the dish for you!

I can remember one big Thanksgiving at my house. I was about eleven and we had everyone! There were probably like, 30 people and about 20 of them stayed with us. It was the best Thanksgiving ever!

Everyone helped in the kitchen when the big day came. The house was filled with laughter and it smelled AMAZING. People brought pies, rolls, amazing side dishes… We had it all!

But the one thing I remember disappearing the fastest (other than the turkey, of course)? Our Shoepeg Corn Casserole and these sweet potatoes!

They’re one of the easiest side dishes you can make. Boil the potatoes, mash them, mix everything together, bake, roast marshmallows on top, and serve! It’s comes together pretty quickly, but it’s also a great casserole to make up ahead of time so you can have a stress-free holiday!

Equipment Needed

Ingredients

  • Sweet Potatoes
  • Salted Butter
  • Bourbon
  • Vanilla Extract
  • Brown Sugar
  • Ground Nutmeg
  • Marshmallows

How To Make Sweet Potato Casserole

Step 1: Cook sweet potatoes

Boil the peeled and chopped sweet potatoes in a large pot and boil for about 40 minutes, or until tender. Strain and set aside.

Step 2: Mash potatoes and mix

Place butter into the pot and let melt. Using a potato ricer, mash the sweet potatoes into the pot and mix.

Stir in the bourbon, vanilla, brown sugar and nutmeg.

Step 3: Transfer to casserole and bake

Transfer the sweet potatoes into a medium sized casserole dish and place in the oven for 10 minutes. Take sweet potatoes out of the oven and top with marshmallows. Feel free to use jumbo sized or smaller marshmallows. I like to use a mix of both!

Step 4: Toast marshmallows

Place the casserole back into the oven for about 5 minutes or until desired brownness on the marshmallows is achieved! Let cool slightly then serve and enjoy!

How To Store

If you’re making this casserole ahead of time, skip baking until the day you need it! Transfer the mashed sweet potatoes into a container or cover in a greased casserole and keep in the fridge.

If you’re storing afterwards, just cover with foil and keep in the fridge. It should keep 3-5 days. The marshmallows will melt when you reheat it in the microwave, but it still tastes delicious!

  • Feeling adventurous? You can use Homemade Marshmallows instead of store-bought!
  • You can use vegan butter and vegan marshmallows to make this casserole vegan.

Bourbon Sweet Potato Casserole with Roasted Marshmallows

Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Servings: 8 servings

Ingredients
 

  • 4 medium sweet potatoes, peeled and chopped
  • ½ cup butter
  • 6 Tablespoons bourbon
  • 1 teaspoon vanilla
  • ¼ cup brown sugar
  • 1 ½ teaspoons ground nutmeg
  • 12 large marshmallows,, for topping

Instructions
 

  • Boil sweet potato chunks for 40 minutes, or until tender. Drain and set aside.
  • Return pot to the stove.
  • Over a low heat, melt the butter.
  • Using a ricer, mash the sweet potatoes into the pot. Mix together.
  • Add sugar, bourbon, vanilla, nutmeg, and salt. Mix together.
  • Grease a medium sized casserole, add sweet potatoes.
  • Place in a 350 degree oven and cook for ten minutes.
  • Take out of the oven and add marshmallows on top.
  • Place back into oven until marshmallows are lightly browned, about 5 minutes.
  • Serve.
