Chess Pie is the very first pie I learned to make. My grandmother, Nanny, taught me. She always said it was one of her favorites. It quickly became one of mine. I never realized it was more of a Southern dish until I went to college, and nobody had ever heard of it!
To be honest, I hadn’t thought about making a Chess Pie in years. A couple of weeks ago, one of my daughter’s friends wanted to come over and learn to make pie. I racked my brain trying to come up with something easy that I knew she would be successful with. I was flipping some of Nanny’s old recipes looking for inspiration when I found her recipe for Chess Pie. Perfect! It was at this point I realized I had never taught Caylie to make one. It seemed like sort of a rite of passage. I already had pie crust made up in the freezer. So I pulled one out, gave Caylie and Sam the recipe, and turned them loose in the kitchen. (Nanny probably gave me a bit more guidance, but I was only 10 or 11. And Caylie does have experience in the kitchen.) The pie turned out great! Caylie and Sam had fun! And Ian loved the taste testing after it was done!
What is Chess Pie?
Chess Pie is a dessert that originated in England but has taken on a distinctly Southern accent. It’s a very simple mixture of eggs, milk, sugar, a little cornmeal, a little flour, lemon juice, and some vanilla poured into a pie crust and baked.
How do you make Chess Pie?
The first thing is you need a good unbaked pie crust. Then you simply cream your butter and sugar together. Add the flour and cornmeal. And beat in the wet ingredients. Pour it into the above mentioned pie crust, and bake until it sets (no wigglies and jigglies in the middle).
Can you freeze Chess Pie?
I was a little unsure of this myself. There didn’t seem to be any reason you wouldn’t be able to, but I had never tried it myself. So, here’s what I did. I sliced the pie and placed the pieces on a parchment-lined baking sheet. I put it in the freezer overnight. Next, I wrapped each slice individually in plastic wrap and placed in a zip top freezer bag. We have had no trouble with thawing or reheating (if you want it warm). So, the answer is yes. You can freeze Chess Pie.

- 1 unbaked pie crust
- 1/2 cup (1 stick) butter
- 2 cups sugar
- 1 Tablespoon all-purpose flour
- 1 Tablespoon cornmeal
- 5 eggs, well-beaten
- 1 cup milk
- 1 teaspoon vanilla
- 2 Tablespoons lemon juice
- Preheat oven to 350 degrees.
- Cream butter and sugar.
- Beat in flour and cornmeal.
- Add eggs one at a time, beating well after each addition.
- Add milk, vanilla, and lemon juice.
- Beat well.
- Pour into unbaked pie crust and place in oven.
- Bake for 55-60 minutes, until set. (or until a knife inserted in the center comes out clean)
