Cilantro Lime Rice

Cilantro Lime Rice is an easy recipe to make and works wonders as a base for a rice bowl, inside tacos, and so many other things! It’s bright, fresh, and tangy. We always have some in our house because it makes for a quick and flavorful addition to any meal!

Let’s be honest, sometimes you just need a quick and tasty side dish/base to complete your summertime meals. I’m not kidding when I said that this recipe could not be easier! It’s the perfect dish to always have in your back pocket.

How to make cilantro lime rice

If you can boil some water, you can make this easy and delicious dish!

The first thing you have to do is cook the rice. I used 2 cups of rice but you can adjust this for as much or as little as you need! Follow the instructions on the package for the best results.

Once your rice is cooked, gather together the lime juice and chopped cilantro.

Combine all ingredients together into a bowl and it’s done!

Feel free to experiment with amounts and ingredients but I personally enjoy the basics. There is no right or wrong with this recipe. It’s all about preference. Use this as a guide for the basics.

What to serve with cilantro lime rice

With its fresh, bright flavor, this rice goes really well with Asian and Mexican-inspired dishes! Serve it as a simple base for a taco/burrito or as a base for a burrito bowl.

Expert Tips:

  • I prefer to use Jasmine Rice for this but any white rice should do just fine!
  • This rice will reheat well but you will need to add extra lime, probably some cilantro, and salt. The flavors become more dull the longer it sits in the fridge.

Cilantro Lime Rice

This Cilantro Lime Rice is so bright, fresh, and great with so many dishes!

Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 2 cups rice
  • 2 Tablespoons Lime Juice
  • 1/2 cup cilantro, chopped

Instructions

  1. Cook rice according to instructions on packaging.
  2. Add all ingredients into a medium mixing bowl.
  3. Stir until well combined.

Notes
