Mama used to buy those boxed cinnamon streusel cake mixes. It was a fast, easy way to whip up a coffee cake. She didn’t like to bake from scratch, so this was perfect. It involved no recipe planning, writing, or testing. And the results were guaranteed! It was also something we could grab running out the door because we were late for school. It made a perfect after school snack, or even dessert after dinner. I see the appeal. However, I do like to bake! The planning, writing, and testing are part of the fun for me. It allows me to express my creative side!
What Is Coffee Cake?
Coffee cake is a rich, buttery cake with a streusel filling and topping. It has a light drizzle of icing. The name comes from the way it is traditionally served – with a cup of coffee! Creative, huh?
How To Make Cinnamon Streusel Coffee Cake
This is another one of those recipes where mis en place (getting all your ingredients together before you start mixing) is a really good thing. A couple of hours before you are ready to start baking, set your butter and eggs out so they can come to room temperature. Make sure to make the streusel first and set it aside. You don’t want to have your cake batter made and start pouring it in the pan only to realize you forgot to make the filling. OOPS! (I’m totally not speaking from experience or anything.)
After making the streusel, go on and whisk together the flour, salt, baking powder, and baking soda and set it aside. Next, cream the butter and sugar. This is important because it lightens up the texture of the cake. The eggs come next. Add them one at a time and beat well after each one to make sure it incorporates into the sugar/butter mixture. When the eggs have all been added, it’s time to start making it look like cake batter. Add the flour mixture alternately with the sour cream, beginning and ending with the flour mixture. Then stir in the vanilla.
If you followed my advice and made your streusel first, it’s time to put it all together. Spread half the batter into a prepared pan. Top it with 2/3 of the streusel topping. Spread the other half of the batter on top and sprinkle with the rest of the streusel topping.
Now, bake. You may need to cover the coffee cake about half way through the cooking time to prevent over browning. The bake times in this recipe are approximate. I baked it twice in 2 different ovens. It took 45 minutes the first time and 55 minutes the second time. Make sure you check for doneness with a wooden pick (a toothpick will work fine). I tried it with a traditional cake tester and it came out clean 25 minutes before the cake was baked.
After the cake is baked, remove it from the oven and let it cool. While it’s cooling, mix up the icing. Drizzle it on top of your cooled coffee cake, cut a nice big slice, pour yourself a cup of freshly brewed coffee, and ENJOY!

Cinnamon Streusel Coffee Cake
Tender, buttery, moist. This coffee cake is sheer perfection!

1/2 cup brown sugar, firmly packed
1/2 cup pecans, finely chopped
1 Tablespoon all purpose flour
1 Tablespoon cinnamon
1/8 teaspoon salt
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 cup unsalted butter (2 sticks)
1 cup sugar
1 cup sour cream
1 1/2 teaspoons vanilla extract
1 cup confectioners sugar, sifted
2 Tablespoons milk
1/2 teaspoon vanilla
- Chop pecans in food processor (or chop finely by hand).
- Add brown sugar, cinnamon, flour, and salt. Mix well.
- Preheat oven to 350 degrees.
- Spray 9-inch square pan with cooking spray. Set aside.
- Whisk flour, baking powder, baking soda, and salt together. Set aside.
- Cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Reduce speed to low and add flour mixture alternately with sour cream, beginning and ending with flour mixture.
- Stir in vanilla.
- Spoon half of cake batter into prepared pan.
- Top with 2/3 of streusel mix.
- Spread other half of cake batter on top.
- Sprinkle with remaining 1/3 of streusel mix.
- Bake for approximately 45 – 55 minutes until cake tests done.
- Remove from oven and allow to cool completely.
- Mix sifted confectioners sugar, milk, and vanilla in small bowl until smooth.
- Drizzle onto cooled cake.
