Easy Dark Chocolate Truffles

These homemade Dark Chocolate Truffles are so easy to make and only require a few simple ingredients! Rich, decadent, and silky smooth chocolate with toasted pecans, coconut, and cocoa powder. Can it really get any better?! Ready in about 2 hours, these perfect bites make for a great gift or even just an amazing dessert that can seriously impress!

About The Recipe

I am a sucker for dark chocolate truffles! If you’ve been here for a while then you know that i absolutely adore all things dark chocolate. These might be at the top of the list.

Seriously, this is in my top three all-time favorite desserts right now. It’s so easy to make! Melt chocolate, place chocolate in fridge, roll into little balls, cover with these three amazing toppings, and you’re done!

Oh, and did I mention that there’s no need in expensive chocolate or hard to use equipment? Literally just your favorite dark chocolate chips (personally, I’m a sucker for Hershey’s) and a microwave is all you need.

I know, I was surprised too.

But I couldn’t be happier with these truffles! They are so smooth and decadent that they scream elegance and perfection.

Okay, maybe not literally scream because that would be terrifying.

But you get my point.

The only problem with these little beauties?

It can get a little messy… but it’s an edible and delicious messy that you can’t really complain about, you know? Seriously, chocolate all over my hands? Pfft. No problems here!

And with Valentine’s literally tomorrow, there’s no better time to make these yummy bites!

Ingredients

  • Chocolate chips
  • Heavy Cream
  • Cocoa powder
  • Coconut Flakes
  • Chopped Pecans

Instructions

Dump the milk in with the chocolate chips. Make sure your bowl is big enough to stir! We learned this the hard way and had to switch bowls. Ugh. More dishes…
Anyways, once the two are combined, place the bowl into a microwave and set for 1 minutes and 30 seconds, stirring every 30 seconds.

Once the chocolate is silky smooth, place a large piece of plastic wrap onto the chocolate. Try and have as few air bubbles as possible. Set in the fridge for 1 – 2 hours, or until firmly set. Take off the plastic wrap.

Here comes the fun stuff! Using a small cookie scoop, scoop out your ganache and place on a parchment lined baking sheet.

Once all the ganache is used up, place the pans into the freezer for a few minutes while you gather your toppings and melt some extra chocolate.

Here comes the messy part! Lightly dust your hands with cocoa powder and gently smooth out the ganache into spheres.

Now, using a fork, dip the truffles one at a time into the melted chocolate and place it onto one of the three toppings. Cover completely and set back on the pan (or on a plate) until hardened. Repeat this until there is no more truffles left. Also, make sure to keep your fork wiped off! Too much chocolate build-up can cause the truffles to stick.

And you’re done! You have gorgeous and delicious truffles waiting to be enjoyed.

How To Store

You can keep these truffles in an airtight container in the fridge for about a week. You can also freeze them to have delicious bites a few months later down the road!

Expert Tips

  • If your chocolate hasn’t melted in the time given above, it’s okay! Microwaves have different heat settings. Continue the process until it’s smooth and there are no more lumps of chocolate.
  • If your truffles are too soft, place them back into the fridge/freezer!
  • Make sure to dust your hands in cocoa powder to roll the truffles. This is to ensure they don’t stick.
  • These truffles will keep 2-3 days in an airtight container on the counter, up to 2 weeks in the refrigerator, or in the freezer for a few months. If you freeze the truffles, let them thaw in the fridge before needed.
  • This recipe can easily be halved.

Easy Dark Chocolate Truffles

Rich, decedent, and silky smooth! These Easy Dark Chocolate Truffles are SO GOOD and make for the perfect bite.

Cook Time: 2 hours
Additional Time 25 minutes
Total Time: 2 hours 27 minutes
Servings: 5 dozen

Ingredients
 

Truffles:

  • 4 cups dark chocolate chips
  • 2 ¼ cups heavy cream

Chocolate Coating:

  • 2 cups chocolate chips
  • 1 Tablespoon coconut oil

Toppings:

  • ½ cup cocoa powder, sifted
  • ½ cup chopped toasted pecans
  • ½ cup unsweetened coconut flakes

Instructions
 

  • Place chocolate chips and cream in a large microwavable bowl.
  • Microwave for 30 seconds. Stir.
  • Repeat microwave 30 seconds and stir 2 more times, for a total of 1 minute 30 seconds.
  • Continue stirring until chocolate is completely smooth.
  • Place a piece of plastic wrap over top of bowl and press down until it touches the surface of the chocolate.
  • Refrigerate for at least an hour, until the chocolate is firm enough to scoop.
  • When the chocolate mixture has chilled, use a small (1 inch) cookie scoop to scoop mixture into balls and place on parchment lined baking sheet.
  • Place in freezer for at least an hour or until firm enough to handle.
  • Dust your hands with cocoa powder and roll each chocolate ball until smooth.
  • Place back on parchment lined baking sheet and put back in the freezer.
  • Melt 2 cups of chocolate chips along with 1 Tablespoon coconut oil.
  • Stir well.
  • Remove truffles from freezer and dip them in chocolate to coat.
  • Roll in desired coating and return to parchment to dry.
  • Store in refrigerator.
