This easy to make Tomatillo Sauce (or Green Sauce/Salsa Verde!) is a go-to for when you need a flavorful and delicious sauce that’s great for weeknight dinners or even the weekends. Tangy tomatillos, with subtle hints of spice and cumin, followed by bright and refreshing cilantro and lime blended together to create this silky smooth and delicious sauce. The secret? Using just a little bit of fresh red onion! It adds a wonderful depth of flavor…with minimal effort! Be sure to serve this as a sauce for your favorite tacos, enchiladas, or healthy grain bowls. So versatile, but oh so delicious!

I’ll be honest, tomatillo sauce is my go-to order for pretty much anything! No matter where I am or what I’m ordering, if there’s an option for it, I’m definitely getting it. From tacos, to enchiladas, to rice bowls! It’s such a delicious addition to every meal and truly my favorite sauce for so many different meals

My mom and I were inspired to make our own after one of our favorite restaurants stopped selling it on their menu a couple of years back. I think it took us about a month of testing to finally get everything just right.

Since then, it’s been a staple to have in our freezer for a quick addition to our lunches and dinners! And while this recipe isn’t authentic, I can promise that it really does taste good!

There’s such a wonderful simplicity, but also depth that just can’t be found in the store-bought versions. Homemade is always better, you know?

Oh, and it’s super simple to make! All you need to do is quickly cook the tomatillo’s, core them, and blend them with all the other ingredients. There’s minimal prep work and lots of flavor.

What is Tomatillo Sauce?

Tomatillo sauce, green sauce, or salsa verde is a sauce in Mexican cuisine that is used for a variety of delicious dishes! There are many different versions of this sauce and this is our take on the recipe. While it is not traditional, it IS super delicious!

Ingredients

  • Fresh Tomatillos
  • Garlic Cloves
  • Red Onion
  • Jalapeño Peppers
  • Serrano Peppers
  • Fresh Cilantro
  • Lime Juice
  • Salt
  • Ground Cumin
  • Ground Cayenne Pepper

How To Make Tomatillo Sauce

Step 1: Cook tomatillo’s

Place tomatillo’s and garlic cloves in a large stock pot filled with water. Place over high heat and let boil for 5 minutes.

Strain into a colander and set aside to cool.

Step 2: Core and blend

Over a blender or food processor, carefully core the tomatillo’s, being sure to remove the hard stems. Place garlic, onion, jalapeños, serranos, cilantro, lime juice, and seasonings in blender. Blend until smooth.

What To Make With Tomatillo Sauce

The wonderful thing about this simple sauce is that it goes with SO. MANY. THINGS. It’s bright, flavorful, and just a touch spicy. Here are a few of our favorite dishes to serve with this sauce.

  • Any kind of tacos
  • Enchiladas (Specifically our Chicken Enchiladas!)
  • Grain and/or rice bowls
  • As a dip for chips

How To Store

Once this sauce is mixed up, you can use it immediately or store in freezer safe containers or zip-top bags and freeze for 2-3 months.

Expert Tips

  • When husking the tomatillos, keep them under cold running water to avoid getting your hands sticky.
  • Also, if peeling garlic, you can pop the garlic with the flat side of your knife and run it under cold water to keep the paper from sticking to you.
  • You don’t need to wait for the tomatillo’s to cool to core them, but letting them cool is not only easier, but much safer, as the freshly boiled tomatillo’s will be very hot and may burn you.
  • If you would like a spicier sauce, do not core the jalapeño peppers and serrano peppers. If you don’t like really spicy, you can core the peppers.
  • This recipe is naturally gluten-free and vegan.
  • Coring the tomatillos can be a little messy, so make sure to do it over your blender or over a bowl.
  • If you would like a little chunkier sauce, blend it less.

Easy Tomatillo Sauce (Salsa Verde!)

The perfect addition to so many meals! This easy to make Tomatillo Sauce, also known as Salsa Verde, is bright, full of flavor, while having just enough spice to compliment all of your favorite dishes. So. GOOD.

Cook Time: 5 minutes
Total Time: 30 minutes

Ingredients
 

  • 3 pounds tomatillos, washed and husked
  • 12 garlic cloves, peeled
  • cup sliced red onion
  • 2 large jalapeño peppers
  • 2 serrano peppers
  • ½ cup cilantro
  • ¼ cup fresh lime juice
  • teaspoons salt
  • ¾ teaspoon cumin
  • ¼ teaspoon cayenne pepper

Instructions
 

  • Place tomatillos and garlic in a large pot.
  • Add water to cover.
  • Bring to boil over high heat.
  • Reduce heat to medium.
  • Let boil for 5 minutes.
  • Take pot off heat and strain.
  • Let cool completely.
  • Core tomatillos.
  • Place tomatillos, garlic, onion, peppers, cilantro, lime juice, salt, cumin, and cayenne into blender.
  • Blend until desired consistency.
