This is my version of guacamole. It is not traditional by any stretch of the imagination. Growing up, I wouldn’t go near guacamole. I don’t know if it was the texture, or the color, or just because Mama tried so hard to get me to taste it. (I had to have a rebellious streak somewhere!)
Fast forward a lot of years to lunch with friends at California Pizza Kitchen. Someone ordered White Corn Guacamole and encouraged me to try a bite. I fell in love! It became my new favorite item on the menu. And like everything else that I try and like, I thought, “I can do that.”
I kept combining flavors until I had something I was really happy with. Honestly, it’s not the prettiest dish to look at, but boy does it make up for that it flavor! Sweet, creamy avocados, black beans, a nice crunch from the corn and red bell pepper, jalapeños add just the right amount of heat, and a squeeze of lime brings the whole thing together. As an added bonus, it’s terrific for you! It’s great served with chips, or as a topping for a rice bowl or a taco. You could even spoon it on top of a grilled chicken breast to jazz it up. The only limit really is your imagination. Happy eating!
Creamy, crunchy, sweet, spicy, this guacamole is a veritable flavor explosion in your mouth.
2 Avocados, cubed
Half of a medium onion, diced
Half of a red bell pepper, diced
Kernels from 1 ear of fresh corn, about 1/2 cup
2 jalapeños, diced
1/2 cup black beans, rinsed
Handful of cilantro
Salt to taste
Gently stir ingredients together. Season with salt.
