Strawberry Pecan Oatmeal Bake

This Strawberry Pecan Oatmeal Bake is a healthy, easy to make, and delicious breakfast! It’s sweet, nutty, light & fluffy, and the perfect amount of crunch. Packed full of fresh strawberry chunks, pecan pieces, honey, oatmeal, and topped with honey and fresh berries. It cannot get better! SO. GOOD.

About The Recipe

This is definitely one of my favorite things to have for breakfast. It’s sweet without being too sweet, its fruity, nutty, with just a little dash of cinnamon. It’s seriously a great way to get fruit down and have a delicious and healthy breakfast for the whole family.

To be honest, I have always loved oatmeal. It’s one of my absolute favorite breakfast foods because it truly is SO versatile.

You can bake it, you can make actual oatmeal, you can make overnight oats, muffins…

It even makes one of my favorite cookies on the entire planet.

Can it really get any better?

Equipment Needed

Ingredients

  • Oatmeal
  • Cinnamon
  • Salt
  • Baking Powder
  • Milk
  • Eggs
  • Honey
  • Vanilla
  • Pecans
  • Strawberries

Instructions

In a large bowl, combine the oatmeal, cinnamon, baking powder, and salt.

Now, in a medium sized bowl, whisk together the eggs, milk, vanilla, and honey.

Pour the wet ingredients into the dry, mix together!

Carefully fold in the strawberries and pecans. Try not to squish the strawberries! Pour the oatmeal into a greased pan.

Bake at 350 for 20-25 minutes. Let cool slightly and serve!

Topping Ideas

This oatmeal is good, but when you add toppings this bake becomes one of the best breakfast dishes! I have tried so many things and I’ve got you covered when it comes to needing idea for toppings. These are the absolute best!

  • Fruit of any kind! Berries and bananas are the best 🍓🍌
  • Chantilly cream/sweetened whipped cream.
  • Maple syrup or honey! 🍯
  • Powdered sugar
  • Extra pecans/any nut 🥜

How To Store

Luckily, this can be frozen or kept in the refrigerator! I tend to keep this in the fridge and munch on it over the course of a few days. You can cover it with plastic wrap and set in the fridge and slice as needed. Reheat in the microwave and enjoy!

If you want to freeze this, slice into individual servings and save in a freezer safe bag or container.

Substitutions

  • You can use fresh or frozen strawberries for this recipe!
  • If you don’t like honey, nut, or dairy, you can change all these out for something you prefer! I personally love this recipe with almond milk, almonds, and maple syrup as substitutes.
  • You can use about 1 Tablespoon of flax eggs as a substitute!

Expert Tips

  • If you don’t serve this with topping (honey, maple syrup, powdered sugar), increase the honey to 1/2 cup.
  • This recipe stores and reheats really well!
  • Make sure you don’t use instant oatmeal.

Strawberry Pecan Oatmeal Bake

Healthy, easy to make, and seriously delicious! This Strawberry Pecan Oatmeal Bake is one of my favorite things to have for breakfast.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Servings: 6 servings

Ingredients
 

  • 2 ½ cups oatmeal
  • 1 ½ teaspoon cinnamon
  • ¾ teaspoon salt
  • 1 teaspoon baking powder
  • 1 ½ cups milk
  • 2 large eggs
  • cups honey
  • 1 ½ teaspoon vanilla
  • ½ cup chopped pecans
  • 1 cup sliced strawberries

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray 3 quart casserole with cooking spray. Set aside.
  • In a medium bowl, whisk together milk, eggs, honey, and vanilla. Set aside.
  • In a large bowl, combine oatmeal, cinnamon, salt, and baking powder.
  • Add wet ingredients and stir together.
  • Stir in pecans.
  • Fold in strawberries.
  • Pour into prepared casserole.
  • Bake for 20-25 minutes, until set and lightly browned.
