Ice cream – specifically vanilla ice cream is something I remember vividly having throughout my childhood. My brother, Ian, used to make the best vanilla ice cream in the whole world! (Okay, maybe I’m exaggerating but to little 5 year old me, it couldn’t have gotten better.)
In Mississippi, we had really hot summers. Like, melt your make up off the moment you stepped outside kinda hot. As kids, none of us (i.e. cousins, friends, etc.) wanted to be outside during the summer unless we were in the pool OR we could talk Ian into making some of his vanilla ice cream.
Okay, maybe that’s a little dramatic. You gotta remember that I was really small! Anyways, Ian became king of the world for the next couple of hours. We’d try (emphasis on try) to help Ian make the ice cream but somehow, we’d always just find ourselves in the way. That’s when we would decide to sit in the floor or on the counter and keep him company as he worked his magic.
He’d occasionally let one of us whisk the sugar and milk together but not often. Let’s just say that we weren’t always the cleanest when it came to helping in the kitchen…
When the ice cream finished freezing, every kid in the house would run into the kitchen with a bowl or an ice cream cone. Then, we’d feast. Then immediately after head right back outside and play until sundown. It was the best way to grow up. Seriously. But now, at the ripe age of eighteen, there isn’t really a whole lot of that. The ice cream torch has been passed on to me and for the last couple of years, I’ve been working hard on perfecting a version of my brothers vanilla ice cream.
Not gonna lie, I actually prefer my ice cream to my brothers. It has way less sugar but more vanilla and cream! It pairs really well with other desserts like our Dark Chocolate Brownies but it tastes ah-mazing just by itself.

The Best Vanilla Ice Cream
Creamy, smooth, and absolutely the best vanilla ice cream there is!

1 cup heavy cream
1 cup half & half
1–1/2 teaspoons vanilla paste
1/3 cup sugar
a pinch of salt
- Combine all ingredients in a medium sized bowl.
- Stir gently until sugar is dissolved.
- Freeze according to your ice cream maker instructions or place in freezer and stir every 15 minutes until set.
If you don’t use an ice cream machine, this ice cream will still work; but it won’t be as light and fluffy.
